Are you only able to have one watch sync’d to your account or can you have more then one?.
For example lets say one day you want to wear your galaxy watch 5 and another you might want to wear an apple watch SE or maybe a
pixel watch.

Are watches synced to accounts? If so this is new to me.

In a sense yes they are. How else would one be able to see a watch face they like and put it on their watch?

I found having two Samsung watches . I have one at a time connected to Samsung Wearable App . But when I sync a Facer Face to one of them it ends up on Both . The settings of the Facer App on my phone only shows one Watch model . I think if you had an apple as well that would not happen . I know guys who run Two Watches with Facer on , make seperate accounts . One for wearing one for testing .
I have actually taken Facer off my older watch . It is now my Spare ECO Watch with Faces I made on the other platform .
