On the download menu there is a circle with circles around it and when you click it it turns into a circle with a half circle in it. I thought it was a sun and moon.
What is it and how do I gain access to the secondary watch face that is on it?

What you mean is the dim mode!
If you have always on display on your smartwatch it will show the design that you see clicking on the circle that you mean
